The Robert Herder Breakfast Knife Humpback Stainless Steel, Plum Wood, Humpback Knife is a typical German breakfast knife with a hump blade. The knife is therefore also called a humpback knife, especially in the German knife capital Solingen. I received one of these knives as a gift and wanted to order four more. However, I didn't know that in addition to the stainless steel blade (mine), there was also a carbon fiber blade (not stainless), so I didn't pay attention to this when ordering. I received the carbon fiber blade. I was surprised to find stains and rust on the blade and only then did I read online about the properties of the carbon fiber blade and how to care for it. The instructions included with the knife say nothing about maintenance, except that it's not dishwasher safe. The knife must be washed, dried, and oiled immediately after use. This extensive maintenance makes it only suitable for limited everyday use for me.
Great knife, very sharp and feels comfortable in the hand. I am satisfied with it, even though there is a downside: the carbon blade discolors very quickly, and for ease of cutting, the blade could be a bit longer, but that is probably because I have used a knife like this with a slightly longer blade for decades. Nevertheless, I can recommend this knife to everyone.
Great breakfast knives. Razor-sharp! This makes cutting a roll, slice of cheese, or sausage a breeze. Thanks to the shape, the knife is also great for spreading butter, French cheese, or pâté, for example. Jam works too, of course. In short, a great knife for breakfast or with drinks.
As always, Herder is of course a fine knife. Because it is carbon, it does discolor, but that has a certain charm. It is a pleasure to eat with such a sandwich knife. The rounded tip is very handy for spreading on bread. But above all, the sharpness: no other knife can match that.
A fine knife in itself; well-sharpened, it cuts and spreads very nicely. Robert Herder knives are fine knives in any case. It is just a pity that there are two types for sale: the standard blade and a stainless steel one. The first one I bought was not stainless; it gets stains that are difficult to remove. That is why I don't understand why the standard knives are still being sold; in the kitchen, you only need stainless steel.
The Windmühlenmesser (blue-plated) is excellent, super sharp (keep it sharp with the ceramic honing rod), a great companion for breakfast and dinner. Since it's not stainless, the blade should be cleaned and dried immediately after eating. Occasionally apply a little Ballistol to the handle and also to the blade (Ballistol is harmless).
I have given this knife as a gift quite often, but I have two of them myself. They are (almost) the only knives I still use! For bread (perfect), vegetables, onions, meat... I especially like the carbon version because of the weathered look that comes with it for free. I'm a fan!!
Beautifully sharp breakfast knife, lovely plum wood. Already a few corrosion spots after just one use, but you know that, it's not stainless steel. Clean immediately after use and always dry thoroughly! So handle it with care. No regrets about this purchase.
