The windmill knife Kochknesser K4 is classified as a medium-sized chef's knife and, along with the smaller K-knives, is one of the larger variants. It is ideal for traditional cutting and preparing meat, vegetables and fruit on the cutting board. The K4 windmill knife can be used to cut, weigh and chop ingredients, and it is also ideal for flattening and filleting meat and fish. The blade has a length of 130 mm and is made of stainless chrome-molybdenum-vanadium/carbon steel hardened to approximately 59/60 HRC. It is hand-blown blue (a special fine grind) and made according to the „Solingen thin grind“ principle, which gives the blade exceptional sharpness, edge retention and stability. The handle of the windmill knife Kochknesser K4 is robust and ergonomically designed,is made of beautifully swirled, hard walnut root wood and has four brass rivets. It fits comfortably in the hand and allows for fatigue-free work. It is recommended not to clean the windmill blade in the dishwasher and to occasionally treat the handle with Herder wood care oil. To protect the blades of the high-quality windmill knives chef's knives, it is advisable to use a soft cutting pad made of wood or plastic. What a beauty

What a beautiful chef's knife, what a magnificent product! Is there a more beautiful chef's knife? I don't think so. Compared to the Robert Herder K2, the K4 has a thicker handle that fits well in the hand. Beautiful plum wood that requires a little oil every now and then. Fine rivets, four of them, a hallmark of Robert Herder's K-series. A beautiful wide carbon steel blade. Shorter and wider than the K5 and quite unique. I find it very pleasant to work with. Stable in the hand, and naturally super sharp straight out of the box. Make sure the blade is dried thoroughly after use. It is not stainless steel, but that gives it all the more charm. If you put it away for some time, it is advisable to apply some oil to the blade. Always wash by hand and store properly after use.
