The K3 is a compact filer and chef's knife that, thanks to its finely ground shape, is ideal for filleting meat and small fish from root to tip. Of course, like any excellent kitchen knife, it can also be used to cut vegetables and harder fruits.
Robert Herder K-Series kitchen knives have a carbon/stainless steel blade with a carbon content of at least 1%. The hand-ground blade is ground with the "Kessel fulling grind", a variant of the traditional Solingen thin grind. It is an almost forgotten, special grinding technique used to form a convexly ground cutting edge. The result is a knife with extreme sharpness and an exceptionally high edge retention.
The ergonomic handle with its rounded shapes is slim and delicate and fits naturally in the hand. The K-Series was designed for chefs and home cooks, as well as those who make extensive use of their kitchen knives and appreciate excellent quality.
Please note that carbon steel is not stainless. The knives must therefore be treated carefully and definitely do not belong in the dishwasher. Clean and dry the knives well after use and may oil the blades slightly. With a little care, you will enjoy these knives for years to come. The carbon steel may sometimes show slight discoloration. This is normal for the type of steel used and has no effect on the use and edge retention of the knife.
Note: Robert Herder's knives are mostly made by hand.

I have a lot of fine quality knives, and this one slices better than almost all. This is due largely to the thinness of the blade, which is like a surgeon's scalpel. In the right hands this is a wonderful knife, but I imagine could easily be damaged if used to cut anything too hard. Light and comfortable in the hand, it is a joy to use.
Exceptionally sharp, discolors quickly but that doesn't affect the sharpness. Keep out of reach of children... Cutting has become a joy.
An excellent (all-round) kitchen knife, superbly crafted and very sharp right out of the box! Even tedious cutting tasks in the kitchen ("chopping onions") become enjoyable with it.
