    Top-Notch

    I have always worked with non-stainless steel mill knives from Herder. Their handles are rather primitive in design and a bit too small for my hand. This HRC 60 knife is harder and holds its edge longer. The handle feels as if it was based in Germany on a plaster cast of my cutting hand. The knife is also very suitable for fine turning and garnishing work. A valued addition, although the price seems on the high side.

    Amazing

    Compact knife that requires a bit more attention due to the composition of the blade, but rewards with a (permanently) sharp edge. The extended handle (compared to the small paring knife) ensures that the knife is suitable not only for peeling, but also for cutting meat, chicken, and firm vegetables.

    Just amazing

    This knife has a very thin edge, making it extremely sharp. No other knife I own glides more easily through apples, turnips, and the like. The blade and handle are finely polished, suggesting meticulous handcraftsmanship.

    Excellent purchase

    Excellent purchase! Fits great in the hand, peels and cuts like a dream. With the smaller mill knife included, we don't need any other knives anymore.

    Ergonomics are on top

    It is a lot of money for such a small knife, but I haven't regretted it for a second; what a knife, superb! The handle is very beautiful, but above all, the ergonomics are very successful. It still gives me a 'wow' feeling when I cut something with it. The price of the knife is high, but the return is very high, if it continues to perform as well as it is now for the rest of its life. Now for a santoku.

    Sharp and light

    Very sharp, light - versatile. Thinness of blade contributing to those positives is also susceptible to breakage - strictly paring/light slicing. Carbon blade so not a put away damp knife - and paring/peeling of acidic foods can stain the blade quickly; many call that character.

    Good for everything

    Very nice small kitchen knife for finer cutting work. It is much more versatile than just a paring knife, and due to its quality, it is more than worth the price.
