The knife is very well-made, fits comfortably in the hand, and makes peeling incredibly easy. The blade extends all the way to the end of the handle, is ground thin, and glides smoothly through the cut thanks to its blue-peened surface. The edge should definitely be protected from impacts (knife block or the included cardboard sheath). The carbon steel has excellent edge retention but requires more care as it is not stainless and therefore NOT dishwasher safe. After use, it should be cleaned and dried immediately to prevent tarnishing and rust. I also coat the blade with a thin film of cooking oil after drying as a rust preventative. So far, I am extremely satisfied.
