The Windmill Bread Knife is a highly efficient slicing tool featuring an exceptional hand-polished serrated edge with extremely high, thin teeth designed for effortless, crumb-free cutting of bread, rolls, and cakes.
The blades are forged from stainless chrome-molybdenum-vanadium steel (60 HRC), hand-blown blue, and crafted using the traditional "Solingen thin grind" process for superior, lasting sharpness.
Available in three versatile blade lengths (19.5 cm, 22 cm, and the 26 cm "Cubit long" version), the knives are fitted with symmetrical, ergonomically designed handles available in various premium natural woods or durable POM plastic.
To maintain the delicate, highly effective serrated edge, these lightweight bakery knives must be strictly hand-washed, used on soft cutting boards, and the wooden handle variants should be occasionally oiled.

The knife is very light and the handle a bit flimsy. I had to get used to it for a moment; I prefer a slightly heavier and more balanced knife. However, the sharpening is fantastic and more than makes up for the drawbacks. It cuts through hard and soft breads as well as warm butter. And that is the most important thing. The quality is more than worth the money. Note: a good wooden cutting board is a must.
Our previous Herder bread knife served three generations. Now the handle is slowly coming loose. The new knife is great to use! Nice and sharp.
In addition to the hamburger bread knife, this is a great complement for cutting harder crusts. Simple and functional. Nicely ground thin and very sharp right out of the box. It does exactly what it's supposed to and feels comfortable in the hand. Exactly what I expected from a Windmühlenmesser knife.
Not cheap, a particularly beautiful bread knife, but the quality is exceptionally good. In my personal opinion, there is no better one.
